Valerie - Thit. bo` me^`m vi` ho. u+o+'p vo+'i tru+'ng. V thu+? u+o+'p thi.t bo` vo+'i 1 egg for about 10 mins tru+o+'c khi xa`o coi sao... ne^'u muo^'n se^.t se^.t thi` cho 1 tbsp cornstarch va`o. Nhu+ng la`m sao la`m... HST could never make stir fried dishes as good as those chinese restaurants.. :( :) I think it's the wok heat... vi` lu+?a o+? nha` ko -du? no'ng... oh well..

gophobuon21 I think also they marinade the beef with a pinch of baking soda mixed with a little water, this will make the beef soft and tender ..
HST, yeap you need high heat, but at home try to stir fry the vegies and the meat separately and then put it all together at the end this will help keeping the vegitable from steaming in the low heat. making sure the pan is smoking hot before adding the meat or vegies ... use kikoman soysauce since it has a nice smokey flavor when stirfry, add a little sugar, and oyster sauce, add corn starch mix with water to thicken at the end.

HST co' fa?i ca'i powder ddo' la` ha(`ng the ho^n ??? cuz I've heard about that too and that stuff is not good for you ... Kikoman soysauce are sold at all american supermartket too, you can also get large can of it at Costco
I've used baking soda before and the beef turn out tender just like at the restaurant .
another tip for tenderizing beef especialy large chunk of beef such as tri-tip for BBQing, marinade it with your favorite sauce just like you normaly do before BBQing, but 1 hour before grilling, put about 1/4 can of coke or pepsi or any can soda into the marinade ... the soda will tenderize the meat and make it very tender ... make sure not to leave the soda for too long because the meat will be too tender and fall apart.

HST so far I only used it for BBQ and havent try it with stirfry yet ... I'll experiment with 7-up with stirfry and let you know
